Why is fructose added to certain yogurts?
Fructose has a slightly higher sweetening power than sucrose (also called saccharose – table sugar). So, it is possible to add less for the same sweet taste. Its glycemic index (ability to elevate the glycaemia after ingestion) is also lower than sucrose.
